9131 days...

that's 25 years in days including the leap years. One quarter of a century old. Yeah... I'm feeling old today; as usual. Well; going to spend my birthday in it's usual way; go to school and go for CG at night. Will update this post as I find the time to do so. Been up all morning making a lagsane; a special meal to go along with my birthday.

Nothing really spectacular happened today. But well; tomorrow I will be going to the IT fair. Don’t think I will buy anything though. Nintendo will be showing off their DS Lite at Suntec, that’s about the only thing that’s going to interest me. The PSP is surely better than the DS lite; but the PSP has way too many features that I will not be using.

Too spoilt for choice nowadays. Will be spending the rest of the day archiving my old files; hard to believe that I’ve only got about 2GB of free space left on my laptop in both drives combined! Hopefully I can clear a nice amount of space so that I can load in Starcraft into my computer. With what we are going to receive from church; I don’t mind putting my spare router there. The wireless is gone; but the Ethernet ports are still active; with enough laptops we can set up a LAN shop in church; once the church is building is complete that is and if everyone agrees with the allocation of room space.


Lagsane
Well, here is what I cooked up today. Most of it was taken from the Look Who's cooking DVD, so the parts which are taken from there; please refer to the DVD instead. Moving pictures better than stills.

The lagsane basically has 3 parts. The tomato based sauce; the cheese sauce and the pasta itself. I made the cheese sauce totally according to what was in the DVD, and yeah... it was super rich! Will give all the taste you will ever need for whole dish! So as a result; you can actually make the tomato sauce with salt.

Tomato Sauce
I decided on a vegetarian version of the tomato based sauce instead of the usual meat based one. Am trying to cut down on meat a little. Here are the ingredients:

- Tomatoes
- Mushrooms
- Onions
- Carrots
- Celery
- Garlic
- One can of tomato puree

Chop all the vegies up into small cubes like this:

Fry the vegies (but not the tomatoes and mushrooms) in olive oil and butter until it's really soft and half it's initial size. There should be a little liquid in the frying pan by this time.

I only added the mushrooms at this stage; add a little water so that the whole thing is not so dry. One the mushrooms are half their initial size then throw in the tomatoes and the puree.

Simmer until the tomato sauce is thick.

Pasta sheets:
One egg
150g of flour

I suggest you attempt making your own pasta only if you can get a pasta machine; or else, you will be kneading for about 2 hours. This is quite simple, make a well in the flour, pour in the egg and combine until you get a soft but not sticky dough. The pasta machine is really useful to get it to the right consistency.

I used a pasta machine to get roll it into large flat sheets.

Basically, once it's at this point, you can shape the pasta into a variety of shapes. It took me about 4 tries before I was able to do this well, but it worth the effort and one packet of flour and a dozen eggs is equivalent to about 4 or 5 packets of dried pasta. So quite a lot of savings there.

From this point on, as I stated earlier, I made the cheese sauce exactly according to Bishop's recipe. I also stacked the lagsane the way it was shown in the DVD. If you haven't got a copy of the DVD... then do your part and donate to the church building fun! There are an over abundant supply of DVDs in the church office; just go there and purchase one!

Not much of a birthday meal; but since I made it myself; very self-gratifying! :) As for the pasta machine; it used to belong to my aunt, so don't ask where I got it from! I last heard that you might be able to find one at Robinsons; but I've yet to check it out. If you really want one; there is something called eBay.
