Stef requested this post; unfortunately for Nat; I'm posting at night again... so here is a reciped that is 70% ripped from one of Jamie Oliver's shows. Will tell you the outcome later.
Here are the ingredients:
- Fish (just buy some sutchi fillets from NTUC, really cheap)
- Fresh mint leaves
- Fresh herbs (managed to fine thyme and rosemary at Cold Storage)
- Dried herbs (you can get these at any supermarket)
- Salt and Pepper
- 1 red onion
- Some asparagus
- Lemon juice
- Olive oil
Season the fish with the dried herbs, (I used mixed italian herbs, oregano and dill weed) salt and pepper. Rub it in both sides.
Place the fresh herbs and the red onion on the fish as follows.
Lay the asparagus out like a base for the fish to sit on. Sandwhich all th fish together; like that:
Squeeze some lemon and add some olive oil into the whole thing and wrap in aluminion foil and leave it in the fridge for a few hours. This will let the flavour soak into the fish.
Bake until cooked.
Unfrotunately for me; this turned out to be a disaster. What happened was that I underestimated the amount of time needed to cook the fish. So; the top piece of fish tasted really good; but the bottom layers were uncooked. So I had to pan fry it. Also, I realised I added way too much mint leaves, killed the taste of the fish after I fried it. So lesson to learn; use less mint leaves and baked for a much longer time!
